1 1/2 cups whole milk
3 Tbsp agave nectar
1 tsp peppermint extract
1/2 tsp vanilla extract
Chocolate chips to place in the mold before pouring. Dip chips in the base mixture before placing...something I forgot to do and they all went to the bottom! The last challenge was to make a chocolate quick shell to dip the finished product in. This was actually very easy. All that was needed was to melt chocolate chips and coconut oil over boiling water (double boiler) and let it cool. The finished result looks very pretty and it was easy to get a professional-looking result. Supposedly we can keep the leftover quick shell in the fridge and just let it get to room temperature before using again.
The taste test: excellent...if you love mint chocolate chip ice cream you will LOVE these!!!
umm...its no surprise that i love mint chocolate chip ice cream, so wow, these look incredible! the presentation gets an A+ from this judge! good going!
ReplyDeleteI realize that I can use any kind of chocolate, not just the chocolate chips that the recipe called for. So, I will invest in some expensive stuff and the popsicles will be even better!!!!! You would love these for sure!!!
